Wyman's owns three processing plants, two in Maine and one on Prince Edward Island, that run 24-7 during the harvest season. At the peak Wyman's processes upwards of a million pounds each day.
1 can Wyman's wild blueberries, drained (reserve 2 tablespoons juice and add to salsa)
1 small red onion, minced
1 jalapeno pepper, seeded and minced
1 clove garlic, minced
1 red bell pepper, seeded and diced
3 tablespoons lime juice
1/2 teaspoon salt
Fresh ground black pepper to taste
Combine all ingredients in a medium size bowl. Cover and let stand for an hour if possible to let flavors blend. Refrigerate for up to a week.
Variation: Add a few fresh chopped apricots or 1/2 cup fresh corn.
